I remember eating the most delicious Sambal Tumis Kerang on the beach of Teluk Chempedak, Kuantan.

Ingredients

6 servings
  • Ingredients:~2 tbsp cooking oila pinch of shrimp paste/belachan, roasted
  • bulb of onion, blended1 large
  • 4 garlic, blended3 heaped tbsp chilli paste
  • tamarind, diluted in 1 cup of water & drained for juice1 tbsp
  • coarse sugar1 tbsp
  • palm sugar2 tbsp
  • salt1 tsp
  • of boiled & cleaned cockels1 cup

Instructions

  1. 1.

    Heat oil in a pan.

  2. 2.

    Sautee the onions, garlic, chilli paste & shrimp paste till fragrant.

  3. 3.

    Pour in the tamarind juice. Let it simmer.

  4. 4.

    Put in the cockles. Mix the flavours in.

  5. 5.

    Stir all both the sugars & salt.

  6. 6.

    Totally divine with Nasi Lemak!
