As we come closer to the end of Ramadhan, I just feel the need for simple, tasty food that will fill me up and sustain me throughout the day........Prawn Omelette fits the bill perfectly! Lovely!

Ingredients

6 servings
  • Ingredients:3 large eggs, beaten
  • milk2 tbsp
  • oil2 tbsp
  • butter1 tbsp
  • salt1 tsp
  • pepper1/2 cup prawns, cleaned & skinned 1 large onion, sliced1 red chilli, sliced2 birds-eye chilli, sliced1 bunch of coriander shoots1 tsp

Instructions

    Beat the eggs with salt, pepper and milk till it froths.Melt butter in a 6" omelette pan.

    Put in the oil.Sautee' the onions till it softens.

  3. 3.

    The add the prawns and cook briefly.Put in both the chillies.Pour the egg mixture into the sauteed onions & chillies.Keep stirring on high heat for a few seconds.When the eggs begin to set, reduce the heat & stop stirring.Flip the omelette if desired.Enjoy while hot & steaming!
