
Creamy Tomato Chicken Penne
I always enjoy the tomato based pasta sauces & my kids love the creamy sauces.
I always enjoy the tomato based pasta sauces & my kids love the creamy sauces. So, our taste buds met in-between and we had the yummiest Creamy Chicken Tomato resting on a bed of hot steaming penne'. Very satisfying meal... That's for sure :-)
Ingredients

- of penne' (or any pasta of your choice) cooked according to instruction on packet0.5 packet
- butter1 tbsp
- vegetable oil3 tbsp
- chicken pieces10 small
- 1 onion chopped
- garlic, chopped3 cloves
- button mushroom, halved0.5 can
- tomato puree4 tbsp
- canned chopped stewed tomatoes0.5 cup
- 1/2 a cup of water
- whipping cream1 cup
- salt1 tsp
- pepper1 tsp
- sugar2 tbsp
- Italian seasoning0.5 tsp
Instructions
- 1.
Cook the pasta according to the instruction on the packet.
- 2.
Heat oil & butter in a pan.
- 3.
Saute' onions & garlic.
- 4.
Put in the chicken pieces.
- 5.
Sear quickly to brown the outer skin of the chicken.
- 6.
Add the mushroom.
- 7.
Saute' as well.
- 8.
Pour in the stewed tomatoes & tomato puree.
- 9.
Reduce the heat cook till chicken is cooked through.
- 10.
Add 1/2 a cup of water if the liquid has evaporated.
- 11.
Flavour with Italian seasoning,salt, pepper & sugar.
- 12.
Pour in the whipping cream.
- 13.
Reduce heat.
- 14.
Let it simmer gently.
- 15.
Drain the pasta & serve it on a few dinner plates.
- 16.
Dot little bits of butter on the pasta.
- 17.
Scoop up the chicken tomato creamy sauce in the center of the pasta & sprinkle with chopped parsley.
- 18.
Serve immediately.
- 19.
Garlic bread on the side would be good!
