
Chocolate Carrot Cake
This is my absolute favourite Carrot Cake recipe.
This is my absolute favourite Carrot Cake recipe. On top of being really easy to make, it is baked with my favourite ingredient... Chocolates!!! Moist, crumbly and has a very delicate texture... Truly divine!!
Ingredients
- Ingredients:3/4 cups butter
- grated orange rind3/4 cups caster sugar2 eggs2 tsp
- syrup1 1/2 cups coarsely grated carrots1 1/2 cups self raising flour1/2 tsp baking soda1/4 cup cocoa3/4 cup milk1 tbsp
Instructions

Sieve all dry ingredients together.

Put aside.Beat butter & sugar till fluffy & white.Put in egg one at a time, beating in between.Pour in the syrup, orange rind & grated carrots and mix by hand.Put in dry ingredients alternating with milk, starting and ending with the dry ingredients.Pour into a greased 8 inch tin.Pour into a preheated 180 deg oven.

Bake for 45 mins - 1 hour.Cool on a rack.

Remove from tin.Ice with cream cheese frosting when cake is cool.Cream Cheese Frosting: 1 cup cream cheese2 tbsp butter1 tsp orange rind3 cups icing sugar2 tsp hot waterMethod for Frosting: Mix all the ingredients together till smooth.Spread over the cake.
